Impossible. Unless you stay in touristy areas with English, like Shanghai and Beijing. Also, ignore people who try to give you phrasebooks or tell you "Oh it's easy, hello is NEE HOW." You might get that down, but without study you'll never be understood by anyone.

tl;dr: Get a guide or stay in big cities.

It is not that difficult, many Chinese speak some English, especially at tourist sites and hotels.
If you get a phrase book you can say a few things and even those that can not speak English will help you.
I have found that the Chinese are very friendly and helpful.
The phrase book will have some of the signs that are helpful, such as the rest room, and train station, etc.
If you use a guide at some places they speak excellent English, and if you are in the off tourist season you may have a guide to yourself rather than in a large group.
I have always enjoyed traveling alone rather than with a large group so I can stay longer or leave earlier if I wish.

Very difficult.
Especially since you will also be unable to read anything.
Does depend on where you will be though, in tourist areas you will be fine.
