The tickets were bought via AAdvantage using points. The tickets back involve one stop along the way at Chicago. I flew to China already and am about to leave, but I want to extend my trip another week. There’s no problem with my passport/visa so I can technically stay another month if I wanted to. Is there any way to extend my trip without buying another ticket home?

Get in touch with the airline from china to chicago and ask them if they will change your ticket.
If they have seats they have discretion to change the date. If their policy is not to change try to give a very good reason why you need to change, be persistent.
As for chicago to home thats less of a problem probably.
